Healthy for brekky, lunch, dinner or a snack. Besan flour (chick pea flour) crepes are a very easy option, ticking many nutritional boxes. It's quick, inexpensive and will satisfy our gluten free and plant-based friends.
Besan flour is made from chickpeas which this is typically a gluten flour product (and always check the packaging to be certain please allergy sufferers).

In this recipe I include nutritional yeast - a source of vitamin B complex as well as protein, minerals, antioxidants and other vitamins.
Besan Flour Crepes Recipe
Ingredients:
1/2 Cup Besan Flour
1/2 Cup Water
1 Tablespoon Nutritional Yeast
(Makes 4 medium size crepes. Depending on the topping you add, and how hungry you are, this may satisfy 1-2 people)
Method:
Whisk all ingredients, removing lumps. Add more water should you prefer a thinner consistency.
Ladle mixture onto a hot crepe maker or frying pan. If this is a surface that may stick, oil first. Cook one side then flip to cook the other.
I like mine rather thin and a bit crispy. Thicker crepes work well as a wrap. Get creative - roll up with filling, top with a sauce and create into a cannelloni style dish for instance.
