Easy Seed Crackers

This is an easy recipe to make and much more affordable than buying them. Gluten free, with Omega-3 essential fatty acids, fiber, protein, potassium, iron and zinc.

Ingredients:

160g flaxseeds

80g of mixed seeds (I have used sunflower seeds, pepitas and sesame seeds)

1 teaspoon Smokey Paprika (or get creative with flavour such as cumin, ground coriander, tumeric...)

1-2 teaspoon salt ( I use Himalayan salt)

650ml Water

Soak linseeds in a large bowl submerged in water. Cover and leave over night. The gum, or soluble fiber on the exterior of the seed is softened during soaking.

Soak the mixed seeds in another bowl and leave over night.

The next day: Set the oven to 140 degrees. The linseeds will appear jelly like. Drain the mixed seeds and add them to the linseed mix. Combine seasonings with the seeds.

Thinly spread the seed mix on 2 baking trays. Place in the oven to slowly toast. After about 15mins take the trays out and cut a grid into the seed mix. This help when breaking them apart once toasted. Pop the trays back into the oven for another hour or until the mixture has dried and is crisp.

Remove from the tray and carefully break the seeds into the square portions ready to eat!

*to slow toast: turn oven down to 100 degrees. Alternatively use a food dehydrator
