Today after a couple of days of Christmas indulgence I woke with a craving for light, fresh and healthy food! Quinoa is a great choice as it is high in protein, contains all nine essential amino acids, is high in fibre, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and, well, you get the picture! Quinoa Bread leaves me feeling fuller for longer, and goes well with all of my favourite toppings. In this case it was topped with avocado, kaleslaw, beetroot dip, coconut yoghurt, hemp seeds and pumpkin seed oil.
And very easy to make!
